Turkey Caldo (Soup) Recipe

If you have left over turkey and don't know what to do with it, you can make this simple, but delicious turkey soup.

Turkey Soup Ingredients

Cooked turkey (chopped) - 1.5 cups
Turkey soup stock - 4.5 cups
Onion (chopped) - 1.5 cups
Green onions (sliced) - 1/4 cup
Cherry tomatoes (halved) - 3/4 cup
Minced canned chipotle chiles - 1 tsp
Chickpeas (rinsed & drained) - 15 oz
Salt - 1/2 tsp
Olive oil - 1 tbsp
Garlic (minced) - 1 clove

Cooking Instructions

  • Heat olive oil in cooking pan on medium heat
  • Add in onions, garlic and cook until tender
  • Add tomato and cook for anothe 2 minutes
  • Now add in soup stock, chipotle, chickpeas, turkey, salt, and bring to a simmer
  • Add green onion to each serving of the turkey caldo
