Pot au Feu Turkey Recipe

Pot au feu is french for "pot on the fire", for a French boiled dinner with meat and vegetables.

Pot au Feu Turkey Ingredients

Leftover turkey meat (chopped) - 2 cups
Mushrooms (quartered) - 1 cup
Carrots (chopped) - 1/2 cup
Leeks (chopped) - 1/2 cup
Turnips (chopped) - 1/2 cup
Rutabaga (chopped) - 1/2 cup
Chicken broth - 4 cups
Fresh thyme - 1 tsp
Black pepper - 1/4 tsp
Olive oil - 1 tbsp
Garlic (sliced) - 1 clove
White wine - 1/2 cup

Cooking Instructions

  • Heat 1/2 tbsp olive oil on medium-high heat, then saute mushrooms for 5 to 7 minutes, and remove from pan
  • Heat the remaining 1/2 tbsp olive oil and add carrot, leek, rutabaga, turnips, and garlic
  • Saute for 5 to 7 minutes and add the white wine, and cook for another 2 to 3 minutes
  • Add in mushrooms, turkey, chicken broth, thyme, salt, and pepper
  • Bring to a boil, and then simmer for 12 to 15 minutes until the vegetables are soft
