Pork and Cheese Quesadillas Recipe

The pork in this recipe can be substituted with other types of meats such as chicken and beef.

Pork and Cheese Quesadillas Ingredients

Lean ground pork - 1lb
Onions (chopped) - 1/2 cup
Green onions (chopped) - 1/4 cup
Canned green chilies (chopped and drained) - 1 can (4.5 oz)
Flour tortillas (6.5 inch) - 8
Mexican cheese blend (shredded) - 6 oz (1.5 cup)
Fat free sour cream - 1/2 cup
Salsa - 1/2 cup
Minced garlic - 2 tsp

Cooking Instructions

  • Heat a skillet coated with cooking spray on medium high heat.
  • Add in onion, garlic, pork and chilies
  • Place 4 tortillas in a baking tray and spread about 1/3 to 1/2 cup of pork mixture on each, and top off with 1/3 cup cheese, 1tbsp green onions, and 1 more tortilla
  • Broil the quesadillas for about 2 minutes on each side and cut into 4 wedges
  • Serve with sour cream and salsa
